Gluten Free Protein Pancakes

Breakfast, we all know it’s the most important meal of the day but for a lot of us it’s the most difficult meal of the day to make time for. Whether it’s because we’ve run out of time to have something healthy and substantial, because we don’t know what to have or because we want to workout and don’t want to have something too filling before we hit the gym. Whatever the reason is we all know that we should be having SOMETHING…. In walks my Gluten Free Protein Pancakes!

Personally, I’ve always struggled with breakfast, I’m never super hungry and I don’t like eating anything too heavy for filling in the morning. A little while ago I started pre-making breakfast items that I knew I would eat, that were healthy for me, that would keep in the fridge for a few days or the entire week. The key for me in the morning, a busy mom, is fast, easy and healthy. I need to be able to eat something quickly while I am prepping for clients and getting my kids out the door for school. I am dairy and gluten free, I don’t always want to eat eggs first thing in the morning and I often don’t have time to sit and eat a proper meal until lunch time. I rely on these prepped meals. Meals that I can grab out of the fridge and either heat up in the microwave, eat cold or pop in the toaster. This is where my amazing Gluten Free Banana Chocolate Protein Pancakes were born.

I have recently discovered BiTE Snacks, they are a local company that makes protein powders and bars from gluten free sources, veggies and…. wait for it…. crickets! Yes, I said crickets!!! I'll tell you more about this awesome business after the recipe.

First, did you know that;

I used ¼ cup of BiTE chocolate cricket protein powder in my pancakes which gave me;

  • 15g of Protein
  • 24%DV Fibre
  • 25%DV Vitamin B12
  • 15%DV Iron
  • 30%DV each of Magnesium, Zinc and Manganese.

What a great dose of vitamins and minerals, I wish all pancakes were this good for you!

BiTE Snacks Protein Pancakes

Here is the recipe so you can give these a try

Gluten Free Banana Chocolate Protein Pancakes

(There are approximately 200 calories per 2 pancakes dependent on size and thickness)

Ingredients

¼ c. BiTE Chocolate Cricket Protein Powder

1 c. Almond Flour (makes sure it’s flour and not almond meal)

½ tsp. Cinnamon

½ tsp. Baking Powder

¼ tsp. Salt

1 Ripe Mashed Banana

2 Free Range Organic Eggs

1 tsp. Pure Vanilla Extract

¼ c. Organic Unsweetened Almond Milk

1 tsp. Coconut Oil (melted & cooled)

Directions

Combine all dry ingredients into one bowl. In a separate bowl mash the banana, add the eggs and whisk, add the remaining wet ingredients and mix everything together. Combine the wet ingredients into the dry and mix until just combined.

Using a non-stick griddle set to medium/high heat, spoon the batter onto the griddle in thin round circles. Leave for 4-5min until you see small bubble appear on the top, flip and cook for the same amount of time on the other side.

NOTE: If you don’t have a griddle, heat coconut oil in a pan on medium heat and cook pancakes for approx. 3-4min per side.

These pancakes are delicious both warm and cold. Garnish with fruits, berries or nut butter, as a side to any dairy or non-dairy yogurt. I like making a batch of these and keeping them in the fridge, they are easy to pop in the toaster to heat up. They are also a perfect pre or post workout snack as they aren't too heavy and pack a great protein punch.
